I love food. This probably goes without saying since I have a blog dedicated to food and sweets. But, what I really love is delicious and easy recipes. When I find those I get really, really excited. I'll take a bite of a new creation, raise one eye brow and look at Bradley, "It's a winner!" says my encouraging husband. I have to agree, this Spicy Black Bean Soup is definitely a winner.
Spicy Black Bean Soup
Adapted from All Recipes
-1 Tablespoon olive oil
-1 medium onion, chopped
-2 cloves garlic, minced
-2 Teaspoons Chili Power
-1 Teaspoon Cumin
-1 Teaspoon Cayenne Pepper
-1/4 Teaspoon black pepper
-1 Tablespoon cilantro
-1 can (about 2 cups) vegetable broth or chicken broth
-3 cans black beans, drained and rinsed
-1 can corn, drained
-1 can stewed tomatoes
In a large sauce pan over medium heat combine Olive oil, onion and garlic. Saute until onion is translucent. Add broth, spices, cilantro 2 cans of beans and corn.
In a food processor puree 1 can of black beans and stewed tomatoes. Add to pot. Simmer on reduced heat for 10-15 minutes.
Serve with cheese and sour cream.
