No Baking Required

I woke up early today.

I made coffee and 6:30 a.m.

I poured my half and half in my coffee as I was ready to head out the door at 6:50.

There were lumps in my coffee. 

I poured my coffee out.

The expiration date was October 25th.

That's just not cool. 

I took a ridiculously hard midterm.

I left my brain in a pathetic puddle in the library.

Bradley is suppose to pick it up for me tomorrow.

I wanted something sweet with minimal effort.

No-Bake Cookies.

My day just got better.



Chocolate Peanut Butter No-Bake Cookies
-1/4 Cup sugar
-1/4 Cup honey
-1 Tablespoon unsalted butter
-1/8 Cup unsweetened cocoa powder
-1/4 Cup milk
-1/4 Cup Peanut butter
-1 1/2 Cup old fashioned oatmeal
-1/2 Cup rice crisp cereal

Combine sugar, honey, butter, cocoa and milk in a small pot over medium heat. Bring to a gentle boil for 1 minute. Turn stove off. Add peanut butter. Stir until completely incorporated. Add oatmeal and cereal.

Spoon cookies onto a tray lined with parchment paper and wait until completely cooled.

Makes 12.
