The Meal I fix for Company

I love dinnertime. I love dinner not because it involves eating but because it is such a nice time to talk, relax and to be intentional in relationships...and dinnertime is what allows me to keep posting on this blog! Tonight for dinner I just wanted to make something good. Do you know I have not repeated a single recipe for the entire life of this blog? Bradley says it is time to start repeating recipes but if I start repeating than I may not have anything to write about...dilemma. At least tonight's dinner although it is a repeat it has yet to appear on my blog, so get excited! I am about to introduce the BEST and cutest meatloaf you have ever had!

Mini Meatloafs!

You may not have ever thought to describe meatloaf as cute...but let's just be honest, anything mini is cute!

I can't take all the credit for this recipe, actually I can't even take any. This recipe comes from Gina's boyfriend John. He made it on family vacation when we went to Siesta Key. I LOVE Siesta Key! My mom had everyone cook one night. Bradley and I did haystacks, petros, frito banbitos whatever you want to call them. Totally the easy way out. But hey! That was back in August and I REALLY did NOT cook back then, so that was good for me! Well John, he took it to another level and made meatloaf, and not any meatloaf, mini meatloaf, so cute!

Okay, anyway, back to the meatloaf. I actually made this when I had my in-laws over for the first time a few weeks ago. I know, I'm horrible! I've been married for 9 months and just now have them over! I just didn't really ever think about it because our apartment is so tiny (but adorable). So when we had them over they brought a couple of folding chairs and we had a blast! Maybe one day we will have enough chairs for 6 people. Until that day our guests will have to bring their own chairs. :-)

Basically the meatloaf is a huge hit. Bradley said tonight that we just need to cook it whenever we have company. I don't really know what that says about the rest of my meals...

Here's a picture of it cooked. It's so good I ate half of it before I remembered to take the picture!

Mini Meatloaves
-1 egg
-3/4 cup milk
-1 cup shredded cheddar cheese
-1/2 cup quick oats
-1 teaspoon salt
-1 small onion (or half an onion, or desired amount)
-1 lb ground beef

Mix all ingredients together in a large bowl. *note: the onions are not in the original recipe but it makes it so good! I would definitely use some onion. Form into mini loafs and place on a lightly greased 9x13 glass dish.

-2/3 cup Ketchup
-1/4 cup brown sugar
-1.5 teaspoon mustard

Mix sauce ingredients in a small bowl. Spoon on top of each meatloaf, leaving a small amount leftover. Bake meat loaves at 350 degrees for 45 minutes. Serve with extra sauce as optional.

After dinner, when I was cleaning up, I realized I had shrunk my new placemat. Evidently cotton shrinks guys. :-(
