Yum alert!

I love soup. I 've always just made it from a box, the just add water kind (I love lipton chicken noodle). But since I'm on this cooking kick...mainly because I have pressure from my hypothetical blog audience...I discovered that I can make delicious soup on my own, that is only sorta from a box! Yum Yum Yum!

Broccoli-Cheese-Wild Rice Soup

1 (6 ounce) packate chicken-flavored wild rice mix

1 (10 ounce) package frozen chopped broccoli

2 teaspoons dried minced onion

1 (10 ounce) can cream of chicken soup--I used 96% fat free

1 (8 ounce) package cream cheese, cubed--I used fat free

In a large saucepan, combine rice, rice seasoning packet and 6 cups water.

Bring to a boil, reduce heat, cover and simmer for 10 minutes, stirring once.

Stir in broccoli and onion and simmer 5 minutes.

Stir in soup and cream cheese.

cook and stir until cheese melts.

I also added salt and pepper to taste.

Get a nice big bowl! Enjoy your "hard work" by sitting on your porch, patio or balcony with your soup and a blanket. I just love our balcony. We picked our apartment based upon the view, yes we overlook other apartments, but we also have a pond and a weeping willow tree. Our weeping willow tree is dead at the moment...or in hibernation? And upon it hangs our neighbor's tomato plants, which are also dead. But I love it, because it is our pond and our dead weeping willow tree, and yes, our (neighbor's) tomato plants that I feel an odd but intense loyalty towards. And on our balcony with the lovely view sits the most precious set of patio furniture one has ever laid eyes on. This patio furniture was the first big purchase Bradley and I made after getting married. We bought it half off from World Market (the most amazing store ever created). We purchased it for the sole purpose of enjoying our wonderful view. So...I hope you enjoy your balcony, patio or porch with a big bowl of this soup!

  1. Craziness - I made broccoli potato soup last night!! It was slightly ironic, however, considering it was the hottest day we've had in two weeks. I didn't care, cause it's just soooo good!
